BSc (Hons) Food Science

I completed my Honours degree under the supervision of Prof Kwaku Gyebi Duodu and Co-supervision of Dr T Shoko. My Honours research was aimed at studying the effect of germination and cooking on bioactive compounds of sorghum and cowpea for the potential use, in the role to combat non-communicable diseases (NCDs).

I am currently enrolled for a Master's degree in Food Science, under the supervision of Prof Mohammed Naushad Emmambux. My current research will be aimed at investigating the functional properties of protein isolated from underutilised legumes namely cowpea and Bambara groundnut; for the potential use in food application.
