Prof Sheryl L. Hendriks has written a paper together with Lynnette Neufeld and Marta Hugas for the United Nations Food Systems Summit 2021. The paper focuses on providing a definition of healthy diets to permit the alignment of terminology for the Food Systems Summit.

According to the paper, "A healthy diet is health-promoting and disease-preventing. It provides adequacy without excess, of nutrients and health promoting substances from nutritious foods and avoids the consumption of health-harming substances".

The summit will be held in New York in September 2021 and aims to launch bold new actions to deliver progress on all 17 SDGs, each of which relies to some degree on healthier, more sustainable and equitable food systems. The pre-summit is being hosted in Rome, Italy from 19 - 21 July 2021.
