This research programme set out to determine the potential of E. coli to internalize plants and pose a food safety risk for the consumer. To better understand animal-water-plant-food human interludes, infection systems, survival mechanism, host signal systems and ultimate disease outbreaks were studied using the internalisation potential of different E. coli strains in
lettuce plants as a case study.
